Most of the fighting games still played today were developed in the 90s and as a result, their characters reflect the cultural contexts of that era as they were largely inspired by martial arts films and combat sports, Paul Phoenix is a perfect example, He embodies the early American full-contact karate, which is a mishmash of certain elements from basic karate that American servicemen in Japan picked up with Army boxing. His style features basic boxing techniques combined with backfists and karate-type lunge punches, reminiscent of legends such as Bill Wallace and Joe Lewis.

Law has a typical Bruce Lee style voiceover, which I think is pretty funny.

Tekken and Virtua Fighter are really the only games that take inspiration from actual martial arts to the extent that you can say "Jin is obviously trained in kyokushin karate, and King is clearly inspired by WWE"

Shit in Street Fighter be like "hes a big green goblin who uses electricity and that guy is an indian fella who ate a gumgum fruit"

Another example from Tekken would be the Mishima family. the three are basically the progressions of Karate. Heihachi uses old-school Okinawan style, Kazuya comes from a background of Karate fighters who transitioned to kick-boxing and Jin is the prototypical Karate-based kick-boxer who didn't have to adapt his style.
